Customers can even go into the kitchen and pick out their steak or fish. The ingredients are locally sourced and fresh. The snapper, wahoo, grouper and mahi mahi are local to Virgin Islands waters. Using the basics of French cooking, the meals are fabulous. Some of the items you'll find on the menu include first Course items like; Heirloom Tomato Gazpacho, Crispy Veal Sweetbreads, Pork Belly Reuben, Escargot', Foie Gras Torchon.
